Homemade Pizza Night.....

Ahhh... Pizza! There’s something about brick oven pizza that makes everything you put on it intensify with amazing flavors. That is, if I had a brick oven. But I don't so my convection  oven will just have to do.Tonight was by no means a cooking night. The girls were craving pizza and it sounded like the perfect dinner choice tonight. I still had some left over fresh mozzarella, and tomato basil sauce that we had used to make Rui’s chili on Wednesday, so that would be enough for a small pie. I usually keep on hand a couple of pre measured packs of flour to make the pizza dough.

 After mixing the dough comes my favorite part… the toppings. I love veggie pizza! Since it is Friday the only thing left in the frig that I could use on the pizza was 4 zucchinis and I had frozen broccoli crowns that are the best to use when making pizza! I sautéed them with a little olive oil and they were ready to go!

Yey for science projects.....

This month Natalie and Sofia have been studying about paleontology (the study of prehistoric life) and about dinosaurs. They each chose there own dinosaur to study and write a report. At the end of last week Sofia came home with a diorama project to do on her dinosaur:  Tyrannosaurus Rex 
Now this was BIG for her and us! Her first science project. And she was adamant that she needed to get an A+. We went over together her visions for the diorama and made a list a things we could use from outside and around the house. Thank God for dollar stores!!! They are the best places to shop for arts and crafts stuff for kids and at 99 cents, who can beat that!!! 

So we all jumped in to put this project together and it turned out to be so much fun, I think a little too much fun!!! I had to pull myself back a couple of times and remind myself that this is my daughter’s second grade project, not mine!!! I just can’t help myself.

We all stood back and just looked over to see if anything else was missing. Then Sofia says, " Mom, this is the best project ever!!!" Me and Rui just smiled and looked at each other and we just knew that they would never forget this day.

Ouch.....

Anyone who knows me would have to agree how obsessed I am with taking pictures. Yes, I admit, I'm also "that" obsessed mom with the camera in the faces of my little girls to capture every second they do something I know I will want to remember in the future. Let's just say I never leave home without it. Today was no exception. Rui and I were helping Sofia with her 2nd grade T-Rex science project, and while I was packing up our materials, I see Sofia join her sister, who is briskly walking on the treadmill.(And why my seven year old is briskly walking is beyond me, but I know she'll be SUPER tired and ready for bed very soon!!) She takes one step onto the running mat and trips on Natalie's foot and down she goes!!! She slams her foot onto the belgium blocks we have underlying the fireplace and cuts the side of her foot. I couldn'tt get there fast enough and she was in my arms sobbing in tears. My poor sweetheart. Of course, out comes the HUGE first aid kit and I began the patch up work on her foot. The whole upper area above her little toes turned black and blue right away.
It's never a dull moment around here.
